Perfectly cooked molten lava cake, but it has to have some super dark chocolate components. I Just got through a brief wine course where the instructor paired chocolate and other desserts with a Madeira wine.

Traditionally I've been in to Green and Black's Maya Gold (dark chocolate with chillies). Lately been obsessed with Camino's milk chocolate with fleur de sel.

Maybe I have just had the wrong ones but it seems that all of the Cab Franc I have tried has been too high alcohol or just flat out astringent. Anyone have some recommendations to convert me without breaking the bank?
QOTD: Anytime my chocolate has caramel in it I am a fan.
